Sweet Potato Waffles - the most tasty way of incorporating healthy veggies into your diet.

Directions

  • Beat egg white until soft peaks form. Set aside.
  • In another bowl, mix pureed sweet potatoes with milk, egg yolk, brown sugar, vanilla extract and oil.
  • Combine flour with salt and pumpkin spice (if using). Add to sweet potato mixture and whisk to blend. Gently fold in beaten egg white.
  • Add batter to your waffle iron and cook according to manufacturers direction.
