  • 1 tbsp Olive oil
  • 2 tbsp White wine vinegar

  • 1/4 tsp Cumin

  • 1 scoop Tortilla or corn chips

Ingredients

• 1½ pounds tomatoes, seeded and diced
• 2 scallions, sliced
• 2 tablespoons diced green chilies
• 1 medium jalapeño, seeded and diced
• 2 tablespoon cilantro, chopped
• 2 Tablespoons white wine vinegar
• 1 tablespoon olive oil
• ¼ teaspoon salt
• ¼ teaspoon cumin
• ⅛ teaspoon black pepper
• 1 can (15 ounce) black eyed peas, drained and rinsed
• scoop tortilla or corn chips

Directions

• Mix all ingredients in a large bowl. Best if made 1 day in advance to let flavors blend. Serve with scoop tortilla or corn chips.
