    • 2 tbsp Olive oil

    • 1 tbsp Cumin
  • Liquids

    • 2 cups Water

  • 1 cup of dry quinoa
  • 2 cups of water
  • 2 tablespoons of olive oil
  • 1 package of organic ground turkey
  • 5 cloves of garlic
  • 3 peppers, chopped
  • 3 carrots, chopped
  • 3 scallions, minced
  • 2 tablespoons of chili powder
  • 1 tablespoon of cumin
  • 1 teaspoon of paprika
  • dash of cayenne peppers
  • 1 15oz can of organic diced tomatoes
  • 1 1/2 cups of organic crushed tomatoes
  • 1 cup of organic vegetable broth

Directions

  • Put the 1 cup of quinoa in the two cups of water in a medium pot. Bring to a boil, cover, and let simmer for 10-15 minutes until all the liquid is absorbed. Fluff and set aside. Add oil to a large pot over medium heat. Add garlic and saute for 1 minute. Add the peppers, carrots, and scallions and saute for 3-5 minutes. Add the ground turkey, and mix through until browned (*you can also brown the turkey in a separate pan and then add) Mix in all the spices. Mix in the diced tomatoes, crushed tomatoes and vegetable broth. Simmer on medium-low heat for 1 hour. Serve over quinoa.
