  • 30 ml Lemon juice, freshly squeezed

  • 200 g Caster sugar
  • 1/2 Vanilla pod

• 50ml Grey Goose vodka
• 30ml Freshly squeezed lemon juice
• For the pear and vanilla syrup:
• 1 pear, sliced
• 200g Caster sugar
• ½ a Vanilla pod, split

Directions

• Recipe by Andy Harris Start by making the syrup. Poach the pear in 200ml water with the sugar and vanilla pod. Infuse for 15 minutes, strain through a muslin cloth. In a cocktail shaker, combine the vodka, lemon juice and 30ml of the pear and vanilla syrup. Shake well and strain into a glass of ice.
