Ingredients

  • Sweet potato balls:
  • 400 g/ 14 oz sweet potato
  • 2 tbsp Greek style yogurt
  • ½ dl/ 0.2 cup breadcrumbs
  • 1 egg
  • 2 tbsp sesame seeds
  • 1 tsp turmeric
  • pinch of salt and pepper
  • cooking oil
  • Peanut sauce:
  • 2 tbsp smooth peanut butter
  • 4 tbsp water
  • 1 tbsp low sodium soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp (mild) olive oil
  • 1 tbsp fresh limejuice
  • ½ tbsp honey
  • Other ingredients:
  • 2,5 dl/ 1 cup uncooked brown rice + water for cooking
  • 1 can black beans
  • Cherry tomatoes
  • Fresh spinach
  • Fresh parsley and/or coriander

Directions

  • Sweet potato balls: Chop the sweet potato and cook until soft, then mash. Transfer to a bowl and add all other ingredients (yogurt, breadcrumbs, egg, sesame seeds, turmeric, salt and pepper). Mix well with a spoon and let is rest for 10 minutes. Meanwhile preheat the oven to 200 Celsius/ 400 Fahrenheit degrees. Moisten your hands and form small balls. Place them on a baking sheet that is lined with parchment paper. Brush a small amount of olive oil on each ball. Bake the sweet potato balls in the oven for 20 minutes or until the surface is crisp.
  • Cook the rice and prepare the peanut sauce while the sweet potato balls are in the oven. To make the peanut sauce, just mix all the sauce ingredients together.
  • Assemble all your ingredients in a bowl. Top with the sweet potato balls, peanut dressing and fresh herbs.
