    • 1 Desiccated coconut if desired

Ingredients

  • 1 cup desiccated coconut
  • 1/2 cup ground almonds
  • 1 egg, size 6
  • 4 tbsp extra virgin coconut oil at room temperature (soft not melted) or soft butter
  • 4 tbsp rice malt syrup or honey or maple syrup or 1/4 cup coconut sugar (updated on 10/12/2015)
  • 1 teaspoon ground cinnamon
  • 1 pinch ground nutmeg
  • 1 pinch ground ginger
  • [b]To decorate choose from those ingredients:[/b]
  • Dark cocoa chocolate, melted about 1 square of 5 g for 2 cookies - I used 90% cocoa chocolate but any dark chocolate 70 % or unsweetened carob button works too
  • Extra desiccated coconut if desired

Directions

  • Process all the ingredients in a food processor until it forms a sticky consistent ball of cookie dough. If too sticky add 1-3 extra tbsp of ground almonds to makes the dough easy to shape. It will still stay a bit sticky. You can add a tiny bit of coconut oil on your hands to avoid the dough to stick too much to your fingers too.
  • Form 6/7 cookies dough balls of same size.
  • Place the balls on a baking tray covered with baking paper.
  • Press the balls with your fingers to form thick flat round cookie - about 1 cm thickness.
  • Bake at 180 C (360 F) for 12 minutes or until the sides are golden brown.
  • The cookies will be a bit soft but they will harden slightly when cooling down.
  • Transfer onto a cookie rack to fully cool down.
  • Melt the dark chocolate in the microwave.
  • Dip half of the cookie into the melted chocolate than into dessicated coconut or sliced almonds.
  • Store until 5 days in a metallic box.
