Almond Horn Cookies

Ingredients

• 8 Ounces Almond paste
• ½ Cup Finely ground almonds or almond meal
• 1½ Cup Almond slices
• ½ Cup Sugar
• 1 Egg white
• 1½ Teaspoon Almond extract
• 2 Tablespoons Powdered sugar, for dusting

Directions

• Preheat oven to 375. Line a baking sheet with parchment paper. Combine almond paste, almond meal almond extract and sugar in a mixing bowl. Use a hand mixer to beat. Mixture will be clumpy.
• Add egg white and beat until well combined.
• Spread almond slices in a shallow dish or plate. Roll 1.5 tbsp sized dough into a ball. Roll out ball into a log shape onto almond slices.
• Form logs into a U shape and lay on parchment paper. Bake for 13 minutes, until cookies are light golden brown.
• Let cool 25 minutes. Dust with powdered sugar.
