Ingredients

  • 1⅛ tsp quick yeast (half of a packet)
  • ½ cup warm water
  • 2 tbsp maple syrup (or agave)
  • ½ tsp vanilla extract
  • 3 tbsp aquafaba*
  • 2-2½ cups spelt flour
  • ⅓ cup pitted medjool dates
  • 1 chai tea bag
  • few tablespoons of hot water
  • 1 apple, diced
  • ¼ cup vegan cream cheese (I used Tofutti)
  • 2-3 tbsp maple syrup

Directions

  • Combine the yeast with the warm water and maple syrup. Let sit 5-10 minutes to proof. If it doesnt foam up, your yeast is probably not active, so try again with fresh yeast.
  • Mix the vanilla and aquafaba into the yeast mixture. Add 2 cups of flour to a large bowl and slowly mix in the liquid.
  • Gently mix until combined. If its wet and sticky still, add more flour until it reaches a dough consistency with very little tackiness. If theres too much flour, add more water.
  • Cover the bowl with plastic wrap and let rise on the counter for at least 1 hour. It should double in size.
  • In the meantime, you can prepare the filling. Break open the chai tea bag and process briefly in a food processor to break it down a bit. Add in the dates and 3 tablespoons of hot water. Process until smooth, adding in water as needed. It should be a smooth paste consistency. Let sit in the fridge until ready to use.
  • Once the dough has doubled in size, transfer dough to a floured clean surface and knead for a few minutes. Then begin to roll it out into a thin rectangle.
  • Spread the filling evenly covering the whole rectangle and sprinkle with diced apple. Roll the dough lengthwise. Then with a serrated knife, cut into 7-9 even sized rolls.
  • Heat oven to 350F.
  • Line a 9in baking tray or cake pan with parchment paper and arrange rolls in it, leaving a bit of space between each. Cover with plastic wrap or tea towel and let sit on top of the oven as it heats up to rise again.
  • Once the oven is at 350F. Bake for 20-25 minutes or until tops are golden. Let cool slightly before serving.
  • To make the icing, simply mix together the cream cheese and maple syrup. Continue to add maple syrup until it reaches a drizzly consistency. Once the rolls have cooled a bit, pour icing over them.
