    • 1/4 tsp Cinnamon, ground

  • 10 lb apples, peeled, cored and finely diced
  • 3 lb sugar
  • 1⁄5 t ground cinnamon

Directions

  • 1. Mix the apples and sugar and leave to rest for 48 hours, until a juice is formed. 2. Strain off the juice into a preserving pot, then cook over a low heat until half has evaporated in the cooking, and the remaining juice has darkened and thickened. 3. Add 3/4 of the apple slices and cook, stirring constantly, until the apples are quite thick and no juice remains. This will take about 1 hour. 4. Add the remaining apple slices and cinnamon, and cook until this last batch of added apples is soft and light in color, giving the cheese a marbled effect. Pour the apple mass into a damp cheese bag, tie it closed, place between two boards and weigh down for 2 days. 5. Hang the apple cheese in an airy spot to dry. Store in a cool, dry place.
