Ingredients

• 4 cups fresh spinach
• 4 cups chopped kale, ribs removed
• 2 apples, chopped
• 1 cup dried cranberries
• 1/2 cup chopped pecans
• 1/2 cup feta cheese
• For the balsamic vinaigrette:
• 3/4 cup olive oil
• 1/4 cup balsamic vinegar
• 1 Tbsp Dijon mustard
• 2 Tbsp honey
• 1 Tbsp lemon juice
• salt and pepper, to taste

Directions

• For the vinaigrette, whisk all ingredients together and refrigerate until ready to use.
• Add kale and spinach to a large salad bowl. Top with remaining salad ingredients. Drizzle with vinaigrette and toss gently.
