Ingredients

  • ½ lb. ground pork
  • ½ lb. ground turkey
  • 2 garlic cloves, minced
  • 1 cup fresh spinach leaves, chopped
  • ¼ cup fresh basil, chopped
  • ¼ cup dried apricots, finely diced
  • Sea salt and fresh ground black pepper to taste

Directions

  • Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper.
  • Combine ground pork, turkey, garlic cloves, spinach, basil, salt and pepper.
  • Add apricots to remaining ingredients and mix with hands.
  • Form mixture into 12 meatballs and place them on baking sheet.
  • Bake in oven for about 15 minutes or until cooked through.
  • Serves: 4-6
