  • 1 Tablespoon butter
  • 1 yellow onion (1 cup), sliced
  • 6 slices maple bacon, chopped
  • 10 ounce bag, frozen spinach
  • 1/4 cup sliced sun-dried tomatoes
  • 2 Tablespoons Cornmeal
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 1/2 cups Fontina cheese, freshly grated
  • 1 Tablespoon butter
  • 2 garlic cloves, minced
  • 3 Tablespoons all purpose flour
  • 1/2 teaspoon black pepper
  • 1/4 cup skim milk
  • 1/4 cup whole milk

Directions

  • In a skillet over low heat, melt 1 TAblespoon of butter.
  • Add the sliced onion, cover, tossing occasionally, until they reach a nice golden brown, about 20 minutes.
  • With a pizza stone inside, preheat the oven to 475 degrees.
  • In a separate skillet over medium-low heat, add the chopped bacon. Cook until crisp, about 5 minutes.
  • Remove the bacon to a paper towel, reserving about two teaspoons of the bacon grease.
  • Add the frozen spinach to the bacon grease, and cover until soft and thawed.
  • Strain the spinach, squeezing out as much of the moisture as you can.
  • Cover your pizza peel with cornmeal.
  • Roll out the dough to a 12 inch circle, and place on the pizza peel.
  • To make the sauce, In a small saucepan over medium-low heat, melt 1 tablespoon of butter.
  • Add the minced garlic and cook for two minutes.
  • Stir in the flour, cook for 30 seconds.
  • Slowly pour in the milk, whisking constantly until sauce bubbles and thickens. About 4-5 minutes.
  • Remove from heat, and using a rubber spatula, spread evenly over the pizza dough.
  • Start assembling the pizza, first with the spinach, followed by the caramelized onions, and lastly the sun-dried tomatoes.
  • Pop in the oven for 8-9 minutes, pull it out and add the cheeses and the crispy bacon.
  • Send it back into the oven for another 4-5 minutes until the cheese is melted and the crust is golden brown.
  • Remove from the oven, slice and serve!
