Description

Baked cauliflower tossed in an easy buffalo sauce, topped with a fresh blue cheese dressing, and broccoli slaw, all on pillow-soft (gluten-free) sesame seed potato bread. Its the perfect game day snack.

Directions

  • Preheat the oven to 500 degree F. Line a sheet pan with parchment and set aside.
  • Remove the stems from the head of cauliflower, and chop them into florets, then slice the florets in half so they lay flat. Drizzle with olive oil and salt, and roast for 15-20 minutes or until the edges turn brown. Dont overcook; you want to make sure the florets arent limp, but hold up. Remove from the oven and set aside.
  • While the florets are roasting you can prepare the blue cheese dressing, the buffalo sauce, and the broccoli slaw ;
  • In a small bowl, whisk together the greek yogurt, the blue cheese, and the pepper together. Set aside.
  • In a sauce pan over medium high heat, melt the butter, and then add in the hot sauce. Remove from the heat and stir.
  • Toss the cooked cauliflower in the buffalo sauce, and assemble.
  • In a medium bowl, whisk together the oil, lime juice, garlic powder, salt and pepper. Add the broccoli slaw and toss. Set aside.
  • Split and toast the buns, and then assemble the burgers: Lettuce, buffalo cauliflower florets, slaw, and the thick buffalo dressing. Top with the top bun and serve!.
