Ingredients

  • 2cups shredded cooked chicken
  • 1 small red onion
  • 1 chipotle pepper (minced)
  • 5-6 mini peppers (for color) or 2 regular peppers
  • 2cups chicken broth
  • 1cup rinsed quinoa
  • ¾cup diced cilantro
  • 1½tsp Adobo sauce
  • ¾cup salsa (I used Cilantro Lover’s Salsa!)
  • 1cup corn
  • 10 medium tortillas
  • 3tbsp butter
  • 4tbsp flour
  • 2cups skim milk
  • Salt + Pepper (to taste)
  • 2 cloves garlic (minced)
  • 1cup smoked Gouda, shredded
  • ½cup extra sharp cheddar, shredded

Directions

  • Preheat oven to 400 degrees.
  • Add rinsed quinoa, chicken broth and minced Chipotle pepper to large microwavable and cook according to instructions above.
  • Meanwhile, slice onions and peppers and saute until tender and set aside.
  • Add chicken, onion, peppers, cooked quinoa, cilantro, salsa, corn and Adobo sauce to a large bowl and stir to combine and set aside.
  • Make Creamy Cheese Sauce-Recipe Below-
  • Add half (approximately 1 cup) cheese sauce to bowl of ingredients and stir.
  • Measure ½ cup of mixture on tortilla and fold in sides of tortilla over mixture, then side closest to you and roll. Repeat process until all tortillas are filled and on cooling rack inside baking sheet.
  • Spray generously with cooking spray and put in 400 degree oven for 10minutes or until golden brown.
  • Add 3tbsp butter to a small sauce pan with minced garlic.
  • Whisk in flour until incorporated and little crumb-like balls form.
  • Add milk, ½ cup at a time, whisking constantly until all milk is used and a smooth texture is reached.
  • Allow simmering 2-3minutes until thickened and remove from heat.
  • Add cheese, salt and pepper until incorporated.
  • Serves: 10
