Baked Parmesan Salmon

Ingredients

• 1/4 c. grated Parmesan
• 1/4 c. panko breadcrumbs
• 1/4 c. chopped parsley, extra for garnish
• 2 garlic cloves, grated
• extra-virgin olive oil
• 2 lb. piece of salmon
• kosher salt
• Freshly ground black pepper
• 1 lemon

Directions

• Preheat oven to 450 degrees F. Line half sheet pan with parchment paper.In a small bowl combine Parmesan, breadcrumbs, parsley, garlic and 1 tbsp olive oil.Place salmon on parchment paper and drizzle with 1/2 tsp olive oil. Spread oil evenly all over using a spoon and season with 1 tsp salt and 1/2 tsp black pepper. Sprinkle Parmesan mixture all over salmon and pat down to crust the entire surface. Bake until golden brown, for about 10 minutes.Garnish with parsley and thick lemon slices. Squeeze a bit of lemon on salmon and serve immediately.
