  • 500 ml water
  • 100 ml oil
  • 300 g flour
  • 6 eggs
  • 800 g sugar
  • 400 ml water
  • 1 lemon

Directions

  • In a medium saucepan, add water and oil and bring to the boil.
  • Reduce heat and add the sift flour at once. Stir constantly with a wooden spoon until mixture leaves the sides of the pan and forms a ball, about 10 minutes over low heat.
  • Remove pan from heat and set aside to cool.
  • When cool, add the eggs one by one and mix with your hands for approximately 10 minutes or until you have a creamy dough.
  • Preheat the oven at 180 degree C and line 2 baking sheets with parchment paper.
  • Fill the dough into a piping bag with a wide star nozzle and pipe out the mixture onto a baking sheet (each tulumba should be about 10 cm long.)
  • Bake for 20 minutes or until light golden brown.
  • In meanwhile, prepare the syrup. In a saucepan combine sugar, water, and lemon slices. Bring to boil and let it cook for 10 minutes, with occasional stirring, until sugar has dissolved. Allow to cool and place cooled syrup in a deep bowl.
  • Soak baked tulimbi into the syrup and let them sit in there for 2-3 hours. Strain off the syrup, place on a plate and serve.
