Balsamic, Basil, Blueberry and Brie Sandwich

Ingredients

• ½ cup fresh blueberries
• 1 tablespoon balsamic glaze
• 4 large slices San Luis Sourdough® (Cracked Wheat variety)
• 8-ounces brie cheese, soft double cream variety
• 2 teaspoons chopped fresh basil
• 1 tablespoon butter
• 2 tablespoons honey

Directions

• Use a food processor to blend blueberries and balsamic glaze into a thick sauce (some chunks are fine). You can also use a masher in a bowl but won’t be as smooth.
• Spread brie evenly over 2 slices of sourdough. Spread blueberry mixture over both, sprinkle basil leaves and top with remaining slices.
• Melt butter in a large pan over medium heat. Add sandwiches and cook 3-4 minutes on both sides, until sourdough is slightly browned and cheese is melted.
• Drizzle honey over tops and serve immediately.
