Ingredients

  • 1 block of firm organic tofu
  • 1/2 cup of your favorite BBQ Sauce or see note
  • 1 large organic onion
  • 2 organic garlic cloves
  • 2 cups organic rice of your choice (for this meal I always use organic sushi rice
  • Avocado
  • Green onions
  • Chives
  • Cilantro

Directions

  • Drain and press the tofu using a tofu press. If you dont have a tofu press, wrap the tofu in a clean kitchen towel or a few paper towels. Place the wrapped tofu in a dish and add a heavy book/object on top. (Careful not to place too heavy of an object on the tofu or it may crack.) Leave for about 5-10 min to press the tofu.
  • Once most of the water has been pressed out of the tofu, cut into roughly 1 1/2 pieces with about 3/4 thickness.
  • Preheat oven to 375º
  • Add half of the BBQ sauce to an 8x8 baking dish and spread evenly across the bottom of the dish. Place your tofu pieces in a single layer on the BBQ sauce and pour the other half over the tofu. ( I like to give the dish a few shakes back and forth then using a spatula, spreading the extra BBQ over the tops of the tofu.) Let marinate for about 5-10 min while you prep the rice.
  • Cook your rice according to the package.
  • Line a baking sheet with parchment paper. (or if you have a large skillet I suggest using it) Place the tofu on the parchment paper by hand as to reserve some BBQ sauce for topping. Top each tofu piece with a small amount of the remaining BBQ sauce.
  • Bake the tofu in the oven at 375º for 20-25 min.
  • While the tofu is baking, chop your onion and garlic.
  • In a large pan add about a teaspoon of oil and place over medium heat. Add in your chopped onion and garlic and stir to coat with oil. Spread in a thin layer across the pan to cook. Stir just enough to keep the onions from burning.
  • Cook 15-20 min or until the onions are golden brown and caramelized.
  • To serve - Top with green onions, avocado, or even a drizzle of BBQ sauce. Serve with a side of your favorite vegetable.
