A delicious Black Bean and Quinoa Salad lightly dressed in a Southwestern style cumin lime dressing!

Ingredients

  • 2 cups of cooked quinoa (about ½ cup dried)
  • ¼ cup extra virgin olive oil
  • 1 tsp ground cumin
  • 2 cloves garlic, pressed
  • 2 tbsp lime juice
  • 1 tsp salt
  • 1½ cups cooked black beans (or canned, drained and rinsed well)
  • ¾ cup frozen corn, thawed (rinse under running water and drain well)
  • ½ cup red pepper, diced
  • 2 green onions, chopped
  • ¼ cup cilantro, chopped

Directions

  • Prepare all of your ingredients.
  • Mix your extra virgin olive oil, cumin, pressed garlic, lime juice and salt in a large mixing bowl.
  • Add your quinoa, black beans, corn, red pepper, green onions and cilantro and mix well to ensure the dressing coats everything well.
  • Refrigerate to cool before serving.
