Ingredients

  • 4 cups prepared broccoli slaw
  • 4 slices cooked bacon, chopped
  • ½ cup red onions, diced
  • ¼ cup Greek yogurt, plain
  • ¼ cup mayonnaise (you can use light)
  • 1 tablespoon apple cider
  • 2 teaspoons granulated sugar
  • ½ teaspoon kosher salt
  • ¼ cup dried cranberries, plumped in warm water for 10 minutes, then drained
  • sunflower seeds (optional)

Directions

  • Place broccoli slaw in a medium bowl and set aside. Plump cranberries by steeping them in warm water for about 10 minutes. Drain water.
  • In a small bowl, whisk together, Greek yogurt, mayonnaise, apple cider, sugar, and salt. Fold into broccoli slaw. Add cranberries. Refrigerate for at least 30 minutes to let the flavors blend.
  • When ready to serve, add bacon. Top with sunflower seeds or serve on the side.
