Ingredients

  • 1 cup Short Grain Brown Rice
  • 2 cups Water
  • 2 cups Vanilla Yogurt (I used Silk Dairy Free Yogurt)
  • 1 tbsp Chia Seeds
  • 1 tbsp Hemp Hearts
  • 2 tbsp Honey Crystals (or Honey)
  • 4 Mandarin Oranges
  • ½ cup Strawberries
  • ½ cup Blueberries

Directions

  • To make the rice: In a medium size saucepan, bring rice and water to a boil. Reduce heat to low and cover. Let simmer for 25 minutes, or until all liquid has absorbed. Chill in refrigerator.
  • Chop strawberries, peel oranges, and, along with blueberries, divide into 4 bowls.
  • Add yogurt and add chia seeds, hemp hearts, and honey crystals (or honey) on top of yogurt.
  • Add chilled rice to bowl.
  • Serves: 4 bowls
