Ingredients

• 1 3/4 cup All-Purpose Flour or Whole Wheat Pastry Flour
• 1 tablespoon + 2 teaspoons Baking Powder
• 1 teaspoons Sugar
• 1/2 teaspoons Salt
• 1/4 cup Cold Butter, Cut Into Tablespoon Sized Pieces
• 3 tablespoons Shortening
• 3/4 cup Buttermilk (Plus 1-2 Tablespoons if needed)

Directions

• Preheat oven to 400 degrees and line a cookie sheet with parchment paper or silpat.
• In a large bowl stir together flour, baking powder, sugar, and salt. Using a pastry cutter or fork cut in butter and shortening, until mixture resembles small peas. Slowly stir in 3/4 cup buttermilk, add additional buttermilk if needed to make a moist dough that sticks together.
• Using 2 spoons divide dough into 5 equal sized biscuits and drop onto parchment lined baking sheet.
• Bake for 22-25 minutes until golden brown and a toothpick inserted in the center comes out clean.
