Ham & Cheddar Instant Pot Au Gratin Potatoes

Ingredients

• 5 Potatoes sliced thin
• 1 green onion
• 1 cup chopped ham
• 2 cups heavy cream
• 8 oz Monterey Jack
• 8 oz Cheddar cheese
• 1 tbs butter
• 1 cup water
• Salt and Pepper to taste

Directions

• In a small saucepan place Melt 1 tbs butter add chopped green onion saute for a few minutes until onion is tender. Pour in heavy cream and let simmer until thick and bubbly about 3 minutes. Add in cheeses and stir until melted set aside. Layer your Springform pan with sliced potatoes, Top with ⅓ of your chopped ham. Pour ⅓ of cheddar sauce over the top. Repeat layer 3 times. Pour 1 cup water in the bottom of the Instant Pot with a trivet. Place your pan on the trivet. Cook on manual high pressure for 35 minutes. Do a quick release. To brown the top place in your broiler for 2-3 minutes and serve.
