Description

Ingredients

• 6 cups Rice Krispies
• 1 bag (250 g) miniature marshmallows or 40 large
• ¼ cup butter
• 1 teaspoon vanilla
• (for butterscotch layer)
• ½ cup smooth peanut butter
• ¼ butter
• 1 (10oz) package butterscotch chips

Directions

• In small sauce pan melt ¼ cup butter and peanut butter over medium heat.
• Add butterscotch chips stirring continuously until melted.
• Do not boil or overcook as mixture will become grainy.
• Keep warm while you prepare rice krispies.
• Place ¼ cup butter in large microwavable bowl and heat just until melted.
• Stir in marshmallows, heat until marshmallows are melted. (1-2 minutes)
• Stir in vanilla, then add rice krispies. Combine well.
• Place ½ the rice krispie mixture into buttered 9x9 baking pan. Press down.
• Spread butterscotch mixture evenly over rice krispie layer.
• Top with remaining half of rice krispies, spreading evenly.
• Cover with plastic wrap and refrigerate until set.
