Ingredients

  • 1 sandwich wrap or tortilla (I used sun-dried tomato flavor, but whole wheat would be delicious too)
  • ½ cup brown rice, cooked
  • ½ cup shredded lettuce
  • ½ cup shrimp, cooked
  • 2 tbsp olive oil
  • 3 tsp cajun seasoning
  • 2 tbsp garlic aioli
  • Aioli:
  • ⅓ cup organic mayonnaise
  • 3 garlic cloves, minced and roasted with 1 tbsp olive oil
  • Salt and pepper to taste

Directions

  • Cook rice and shrimp separately, making sure to cook the shrimp with 2 tbsp olive oil and 3 tsp cajun seasoning.
  • While those are cooking, make the aioli.
  • Do so by mincing the garlic and then roasting it in a skillet with 1 tbsp olive oil; combine roasted garlic with mayonnaise, salt and pepper.
  • Place rice, lettuce, cooked shrimp, and aioli on sandwich wrap and then fold then wrap.
  • Enjoy!
