Ingredients

  • 2 tbsp extra virgin olive oil and some extra for serving
  • 1 large yellow onion, chopped
  • 6 oz linguica, chorizo or your choice of sausage, sliced into thin disks
  • 4 cloves garlic, minced
  • ½ tsp pepper
  • 1 tsp oregano
  • 1 tsp paprika
  • ½ tsp cumin
  • 4 medium sized potatoes, peeled and thinly sliced
  • 6 cups (1.5 liters) water or chicken stock
  • Salt to taste
  • 1 bunch kale
  • 2 tbsp extra virgin olive oil and some extra for serving

Directions

  • Heat olive oil in a large pot. Fry onions and sausages for 2 minutes. Add garlic, pepper, oregano, paprika, cumin, and potatoes. Continue to fry for another 2 to 3 minutes.
  • Pour in water or chicken stock. When soup comes to a boil, add salt, reduce heat and let it simmer for 20 minutes until potatoes are very soft.
  • Scoop out about 2 cups of potatoes and mashed well. Return mashed potatoes to the pot. Add kale and continue to let soup simmer for another 5 minutes. Do not overcook kale. It should be bright green and slightly crunchy.
  • Serve in individual bowls drizzled with extra virgin olive oil if desired.
