  • Finely chop carrots in a food processor and sift brown sugar. Blend tofu, applesauce, flour, sugar, baking soda, salt, vanilla, and cinnamon. Stir in carrots and raisins. Pour into pan and bake for 45 minutes at 350 degrees F. Let cool completely and frost with a coconut icing.
