This cheesy seafood medley bake is incredibly rich and is filled with tons of seafood goodness.

Ingredients

  • 6 tbs Butter
  • 3 Garlic Cloves, smashed
  • 1 small Red Bell Pepper, finely diced
  • 1 small Red Onion, finely diced
  • 6 tbs All-Purpose Flour
  • 1/3 C White Wine
  • 2 ¾ C Half-and-Half
  • ½ C Clam Juice
  • 1 tbs Cocktail Sauce
  • ¾ tsp Salt
  • ¼ tsp Cayenne
  • 1 lb frozen Seafood Medley (Shrimp, Clams, Lobster, etc.), defrosted
  • 2 tsp Dried Dill
  • ¾ C Parmesan Cheese, grated
  • ¾ C White Cheddar

Directions

  • Preheat your oven to 350 degrees.Melt the butter in a two-quart saucepan over medium heat. Once melted, stir in the onion, garlic, and red pepper and let cook for two to four minutes while stirring constantly. Sift in the flour and whisk constantly to combine until smooth. Slowly stir in the white wine. Whisk to combine before stirring in the half-and-half, clam juice, cocktail sauce, salt, and cayenne pepper. Continue to cook until the sauce thickens.Add the seafood medley, dill, and half of the cheese. Stir well to combine. Pour into a large casserole dish and top with the remaining cheese. Bake for 35 to 40 minutes or until lightly browned on top.
