Ingredients

• 2 Chicken Breasts (cleaned and pounded- thin)
• 2 large zucchini
• 1 c cherry tomatoes (halved)
• ½ c mini mozzarella balls (halved)
• ¼ c chopped basil (separated)
• 4 tablespoons olive oil (separated)
• 2 tablespoons balsamic vinegar (for dressing)
• Sea salt + pepper

Directions

• Spiralize 2 large zucchini breasts
• Chop tomatoes, mozzarella, and basil
• In a large skillet heat 2 tbsp olive oil. Cook chicken until light brown.
• In a bowl combine zoodles, cherry tomatoes, mozzarella balls, ½ of the basil, olive oil, salt + pepper. Toss until everything is thoroughly coated with olive oil.
• Plate the zoodles and top with cooked chicken
• Drizzle balsamic glaze on top, and sprinkle basil
• Enjoy!
