Chicken Pesto Pasta

  • 1/3 Bag Spinach
  • 1/4 cup Sun dried tomatoes

  • 3/4 Bag Penne pasta

• Baking & Spices

  • 1 tbsp Cherry pepper topper
  • 1 Salt

• Oils & Vinegars

  • 1 tbsp Olive oil

  • 1 cup Mozzarella cheese

Description

Ingredients

• 1 lb. chicken tenders
• ½ medium onion
• Salt, Pepper, & Garlic (to taste - a little goes a long way)
• ⅓ Bag Spinach
• ¼ Cup Sun-Dried Tomatoes (in oil)
• ¾ Bag Penne Pasta
• 2 Tablespoon Pesto Sauce
• 1 Tablespoon Cherry Pepper Topper (sold at HEB)
• 1 Cup Shredded Mozzarella Cheese
• 1 Tablespoon Olive Oil

Directions

• Dice chicken into bite size pieces.
• Dice onion.
• Cook penne pasta as directed on the package and set aside.
• In a large skillet, add olive oil, chicken, onion, and seasoning. Cook on medium heat until chicken is fully done.
• Once the chicken is fully cooked, add sun-dried tomatoes and spinach. Mix together well and cook until spinach is wilted.
• Reduce heat and toss in pasta, pesto sauce, and cherry pepper topper. Mix well until everything is coated with the pesto and cherry pepper topper.
• Add mozzarella cheese and mix together to allow for the cheese to melt.
• Serve & enjoy with your family!
