An innovative gravy recipe called Chickpea & Black Rice Dumplings in Spinach Sauce  is very flavorful & best served with naan/roti. A healthy fusion dinner!

Ingredients

  • Refer Chickpea & Black Rice Fritters recipe for ingredients to make the dumplings
  • To make the spinach gravy
  • 2-3 cups spinach
  • 1 onion
  • 2-3 garlic cloves
  • Half Inch Ginger
  • 3 green chillies
  • 1 tbsp cooking oil
  • 1 tsp cumin seeds
  • Salt as required
  • 1 tsp turmeric powder
  • 1 tsp dhania jeera powder
  • 1 tsp chilly powder
  • 1 tsp garam masala
  • 1 tbsp kasoori methi
  • Cilantro and Onion rings for garnish

Directions

  • Blanch spinach and drain the water. Grind it to a smooth yet thick paste by adding very less water. Keep it aside for now. Splitz onion, garlic, ginger and green chillies to a coarse paste. Heat oil in a pan, Temper cumin seeds and then add the coarse paste. Fry for 2-3 minutes or till the oil starts to leave the sides and the raw smell disappears. Now pour the spinach paste in the pan and add salt. Let it cook for 3 minutes. Then add spices like turmeric powder, dhania jeera powder, chilly powder and garam masala. Mix and cook for another minute. Then add kasoori methi (dried fenugreek leaves) and yogurt. Bring it all together and saute for another minute. Remember to keep the gravy thick and add little if you need. Now prepare the Black Rice and Chickpea dumplings by referring to this recipe - Black Rice and Chickpea Fritters. Only, instead of frying them, do this instead. Shape them into medium sized balls, roll them over semolina and cook them in appe pan using very little oil. Keep rotating the balls so that they get cooked evenly. Keep the lid closed while cooking it and cook it on low to medium flame. Its done when the dumpling turn golden brown in color. Strain the excess oil in paper towels. Just before serving the gravy, add the shallow fried dumpling to it. Garnish it with onion rings and cilantro. Serve warm with any Indian bread like Naan/Roti. You can enjoy this gravy dish guilt free because its nutritious, well balanced, low calorie, low fat and its extremely delicious! This is what clean eating is all about.
