Ingredients

  • 1/2 cup cocoa powder
  • 1/2 cup + 2 Tablespoons gluten-free baking flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 eggs, room temperature (Sub for 2 flax eggs, if needed)
  • 1/4 cup cane sugar
  • 1/4 cup brown sugar
  • 3 Tablespoons butter or DF option, melted
  • 1/2 teaspoon vanilla extract
  • 1/2 cup unsweetened almond milk
  • 1 teaspoon apple cider vinegar
  • 3/4 cup chocolate chips
  • 4 Tablespoons butter or dairy-free butter
  • 3 Tablespoons unsweetened original almond milk
  • Use our Easy Chocolate Frosting

Directions

  • Preheat oven to 350 degrees F
  • Prepare muffin pan with baking cupcake liners.
  • In a small bowl combine almond milk, vinegar.
  • In a medium bowl, whisk together cocoa powder, flour, baking soda, baking powder, salt, sugar, brown sugar.
  • Make a well. Add eggs, vanilla extract, butter, and milk/vinegar mixture. Whisk together until fully incorporated.
  • Spoon 2 Tablespoons into each cupcake liner. b][[(This works phenomenally) [/b]
  • Bake 21-24 minutes until toothpick comes out clean.
  • Allow to fully cool.
  • In a microwave safe bowl combine chocolate chips and butter. Microwave on high 30 seconds, stir, continue until fully melted.
  • Stir in milk until fully combined.
  • Fill piping bag with chocolate ganache filling. Push filling tip into center of cupcake, squeeze very slowly. Once filling begins to come out of the cupcake is when you know its filled.
  • Frost with Easy Chocolate Frosting
