Description

Simple and delicious no bake chocolate orange and chia energy balls. These are high in protein, antioxidants, omega 3 and fibre. Perfect for those on the go and can keep in the fridge / freezer for weeks!

Ingredients

  • ½ cup (100g) Almond butter
  • 1tbsp Orange juice
  • 1.5tsp Organge zest (about one medium orange worth)
  • 2 tbsp Chia seeds (plus extra for decorating)
  • 2 tbsp cacao powder
  • 140g Medjool dates (weighed before the pits are removed)
  • 100g pecan nuts
  • Pinch of salt (this can be optional)

Directions

  • In to the food processor place the pecan nuts and dates, pulse for 1 minute until paste like consistency
  • Now add in the orange zest, almond butter, chia seeds and cacao
  • Blend until fully combined for about 3-4 minutes
  • Once mixture is sticky, roll in to bite sized balls
  • Optional: Add 1-2 sea salt flakes to the top of each ball
  • Decorate accordingly. I like to roll half the batch in extra chia seeds and the other half I put a pecan nut on!
  • Place in to freezer for 1-2 hrs to set, then remove and keep in the fridge in a sealed container (or you can leave them in the freezer until you want them)
