Caution: These are some serious breakfast burritos filled with eggs, Mexican chorizo, monterrey jack and cheddar cheese, and potatoes. Its the sort of breakfast you might crave the morning after a night of fun.

Ingredients

  • 4 eggs, beaten lightly with a fork
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1/2 pound Mexican chorizo
  • 1 tablespoon of butter
  • 1 russet potato, shredded
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded monterrey jack cheese
  • 4 burrito size flour tortillas

Directions

  • Heat a non-stick skillet over low heat. Spray with cooking spray and pour the scrambled eggs into the pan. Stir in the salt and pepper. Cook the eggs gently over low heat, stirring constantly, until the eggs set. Remove the eggs from the pan and set aside.
  • In the same pan, increase the heat to medium and cook the chorizo for about five minutes, or until cooked through. Break it apart with a spatula as it cooks. Using a slotted spoon remove the chorizo from the pan (let the fat drip through the slotted spoon over the pan) and set aside.
  • Remove all but a tablespoon of the fat in the pan. Add the butter and melt it over medium heat. Add the potatoes and the rest of the salt and pepper. Let the potatoes cook until they start to brown on the bottom. Give them a stir and continue to cook them and allow them to brown on the bottom before stirring again. Once they are cooked through and browned remove them from the pan and set aside.
  • To assemble the burritos: Its helpful to microwave the tortillas for about 30 seconds to warm them up before you fill them - they will stretch a lot easier. Scoop a 1/4 amount of the eggs, chorizo, cheese, and potatoes and pile it on one side of the tortilla. Fold the edge of the tortilla over the top of the filling and tuck in the sides. Roll the burrito up. Repeat with the remaining tortillas and filling.
  • Wrap the burritos in tin foil and place on a baking sheet. Pop them in a 300 degree oven and let them warm through for about 10-15 minutes.
