Ingredients

  • 1 (12 oz.) bag frozen shelled edamame (green soybeans)
  • 3 cloves garlic
  • 1 bunch cilantro
  • Zest and juice of one lemon
  • ½ cup water (more or less as needed)
  • 1 tsp. cumin
  • 1 tsp. chipotle chili powder, more or less depending on taste.
  • Sea salt and fresh ground pepper, to taste.

Directions

  • Cook edamame according to package instructions. Drain and let cool.
  • Place garlic cloves in the food processor and process until very finely chopped. Scrape down the bowl.
  • Add cilantro to the food processor and process until chopped. Scrape down the bowl.
  • Add zest and juice of one lemon.
  • Turn on food processor and slow pour water in, small amounts at a time, until you achieve a good consistency.
  • Scoop hummus out and into an air tight container and chill for at least an hour before serving.
  • Serves: 6
