Coconut Cherry Balls

  • 1/2 cup Graham cracker crumbs or finely chopped nuts

Ingredients

• 1/2 c butter, softened
• 1 1/2 c confectioners sugar
• 1 1/2 c shredded coconut
• 1 Tbsp cream or milk
• 1 small jar, marachino cherries, ( mine were large, so i cut them in half)
• 1/2 - 3/4 c graham cracker crumbs or finely chopped nuts

Directions

• 1Drain cherries and set aside. 2Cream the softened butter and confectioners sugar. I used my hand mixer. 3Blend in the coconut and cream; mix well. Chill for 15 minutes. 4Take a piece of mixture in your hand, about a tablespoonful, flatten, add cherry and roll in your hand to completely cover the cherry. 5Roll in graham cracker crumbs or nuts to coat. Refrigerate for 2 hours to chill and firm.
