Ingredients

  • 12 Chicken Strips (Store bought or try my homemade version)
  • Whataburger Honey BBQ Sauce
  • 6 Slices Monterrey Jack Cheese, cut into quarters
  • 12 slider buns
  • Butter
  • 1 pound chicken tenders
  • canola oil
  • For the marinade:
  • 1½ cups buttermilk
  • 1 tablespoon paprika
  • 1 tablespoon garlic salt
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • ½ teaspoon cayenne pepper
  • For the breading:
  • 2 cups flour
  • 1½ tablespoon paprika
  • 1½ tablespoon garlic salt
  • 1 teaspoon onion powder
  • 2 teaspoons black pepper
  • 1 teaspoon cayenne pepper
  • 2 tablespoons buttermilk

Directions

  • Preheat oven to 250. Lightly butter the cut sides of the slider buns and toast on a griddle or non-stick pan. Cut the chicken strips in half. Assemble the sliders in this order: bottom bun, one quarter cheese slice, two chicken strip halves, another quarter cheese slice, squirt of BBQ sauce then top of the bun. Place all sliders on a cookie sheet and cover with foil. (If you dont cover with foil the buns will dry out.) Bake until cheese is slightly melted, about 10 minutes. Serve immediately while still warm. With napkins. You dont want your shirt to turn out like Darins seat belt.
  • In a medium container with an airtight lid, combine all ingredients listed under the marinade section. Add the chicken tenders, ensuring theyre all covered by the buttermilk mixture. (If theyre not, you might want to get a smaller container.) Let them marinate at least 4 hours, but its best to do it overnight. The longer they soak, the better theyll be!
  • When youre ready to cook your chicken, heat canola oil in a sturdy pot with high sides. Pour in enough till you have about 3 - 4 inches of oil. Using a frying or candy thermometer, heat the oil till its about 350 degrees. Once you add the chicken, the temperature will drop. Thats okay. You want it to be about 300 while youre actually frying.
  • While the oil is heating, mix the flour and next five ingredients in a large bowl. Slowly drizzle in the buttermilk and mix a few times with a fork. Next take a couple of your chicken tenders and place them in the flour mixture. Press down a bit to ensure it sticks to the chicken, flip them over and press down again. Lay the floured chicken tenders on a pan or large platter. Repeat until all the chicken is breaded.
  • By this time your oil should be nice and hot. Drop in two or three chicken strips, depending on how big your pot is, using tongs. Youll want to fry each chicken tender about two minutes, flip over, and fry two more minutes. A good tip: your chicken tenders will continue browning once you take them out of the oil just a bit so you want to take them out when theyre almost that perfect golden color. Remove the tenders with your tongs and place on a platter covered with a few layers of paper towels. Repeat until all the chicken is done.
