Ingredients

  • 2 strips bacon
  • 1/2 medium onion, diced
  • 1 red pepper, seeded and diced
  • 1 jalapeno pepper, seeded and diced
  • 1 pound ground beef (I used ground sirloin)
  • 1 tablespoon chili powder
  • 2 teaspoons cornstarch
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons flour
  • 2 cups corn (fresh or frozen)
  • 3 cups chicken broth
  • 1 cup half and half
  • salt and pepper, to taste
  • 4 ounces Cheddar cheese (1 cup grated)
  • 4 ounces Monterey Jack cheese (1 cup grated)
  • 2 green onions, thinly sliced
  • sour cream, for serving (optional)

Directions

  • Preheat a 6-8 quart Dutch oven over medium heat. Cook the bacon until almost crisp. Add the onions, red pepper, and jalapeƱo pepper and cook until softened. Add the ground beef and cook until browned.
  • Add the chili powder, cornstarch, onion powder, garlic powder, salt, paprika, cayenne, and cumin and stir until just combined. Sprinkle the flour over the ground beef. Cook and stir for one minute. Add in the corn, the chicken stock, and the half and half. Stir until well-combined.
  • Cover the soup and cook for 15 minutes. Stir in the cheese a handful at a time. Salt and pepper to taste then stir in the the green onions right before removing from the heat. Serve immediately, topped with sour cream if desired.
