Creamy Strawberry Poppy Seed Kohlrabi Slaw

Description

Ingredients

• 1 small kohlrabi, peeled and julienned
• 1 cup fresh strawberries, sliced thin
• ¼ cup finely chopped red onion
• ⅓ cup chopped walnuts and pecans
• 2 oz vegan cheese, crumbled
• For dressing:
• 1 tbsp olive oil
• 2 tbsp Veganaise
• ½ tbsp poppy seeds
• 2 tbsp balsamic vinegar
• ½ tbsp dijon mustard
• ¼ tsp garlic powder
• salt and pepper, to taste

Directions

• Whisk together dressing ingredients in a small bowl. In a large salad bowl, combine kohlrabi, strawberries, onion, nuts, and cheese. Pour dressing over slaw mixture. Toss to until all ingredients are evenly coated. Store in the refrigerator and serve chilled.
