  • 2.5 lb beef chuck roast, trimmed of excess fat
  • Salt & Pepper
  • 3 Tbs oil
  • 1 cup beef stock
  • 1/2 cup Balsamic Vinegar
  • 1/2 cup canned crushed tomatoes
  • 2 yellow onions, thickly sliced

Directions

  • In a small saucepan, bring the beef stock to a boil and allow to cook until reduced by about half. Allow to cool slightly and then mix in with the balsamic vinegar & crushed tomatoes. Meanwhile, trim any excess fat off of the roast and season with salt & pepper. Heat oil in a skillet over medium-high heat and sear roast for 2-3 minutes per side, or until golden brown. Layer onions on the bottom of your crock pot and add roast on top. Pour balsamic & tomato mixture over the roast, cover and cook on high 4-6 hours.
