Ingredients

  • ½ cup almonds
  • ½ cup pecans
  • ½ cup walnuts
  • 1 cup unsweetened coconut
  • ½ cup dried cranberries (optional)
  • 1 Tbsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp allspice
  • ¼ tsp cloves
  • ¼ tsp ginger
  • ¼ tsp salt
  • ⅓ cup coconut oil
  • ⅓ cup applesauce (unsweetened)
  • 2 Tbsp maple syrup
  • 1 tsp vanilla
  • 1 egg white, lightly beaten
  • 2 Tbsp water

Directions

  • Preheat oven to 275 degrees.
  • Mix almonds through salt together in a bowl. Mix in melted coconut oil, applesauce, maple syrup, vanilla.
  • In a small bowl, whisk egg white with water until foamy. Add to granola and mix well.
  • Spread granola out on a baking sheet lined with parchment paper.
  • Bake for 20 minutes stir and repeat for 60-90 minutes.
  • Remove and let cool for an additional 20 minutes (this is IMPORTANT in clustering).
  • Enjoy!
