Ingredients

  • 3 1/2 cups rolled oats, gluten free certified, if needed
  • 1/2 cup roasted peanuts, roughly chopped
  • 1/4 cup oat flour, gluten free certified, if needed
  • 1/2 teaspoon salt
  • 3/4 cup homemade peanut butter
  • 1/2 cup honey
  • 1 teaspoon vanilla
  • 2 tablespoons oil (I love avocado oil!)

Directions

  • Preheat oven to 325F and line a large baking sheet with parchment paper or use a baking mat.
  • In a large mixing bowl, combine the oats, peanuts, oat flour and salt.
  • In a smaller microwave safe mixing bowl, add the peanut butter, honey, oil and vanilla. Heat the peanut butter mixture in the microwave, stirring every 30 seconds or so, until peanut butter is warm and runny and all ingredients are easily incorporated. Stir until well combined. (This can also be done on the stove in a small saucepan over medium-low heat. Careful not to let it burn!)
  • Pour the peanut butter mixture over the oats. Mix and stir the oats until well coated.
  • Transfer the granola mixture to the prepared baking sheet. Gently press the granola mixture into an even layer using your hand or a spatula.
  • Bake for 18-20 minutes or until golden brown, being sure to stir and then gently press the granola into an even layer again using your spatula around the 10 minute point. (Pressing the granola into an even layer helps to form the clusters!)
  • Remove from oven and let the granola cool completely on the pan.
  • Break the granola into clusters and store in an airtight container. This granola will keep for 5-7 days.
  • Serves: 6-8 (about 5 cups of granola)
