This is my first soup recipe with my new Vitamix! I loved it. I used extra curry based on the last commit but I dont think I needed it. I used carrots from my garden that were very sweet. I will make this again. Super easy!

Delicious soup. Everybody likes it - my husband, family, friends. The only modification that I do is that I fry onion with a little bit of oil before blending all the ingredients together. This makes a huge difference in taste and smell and the soup doesnt feel "oniony". Decorate the soup with small amount of sweet red pepper powder and a leaf of basil when serving.

This too was my first soup made and I cant stop eating it as it is still my favorite. I add garlic and ginger and cant wait for summer when I can use fresh ingredients from the garden!

My first soup in the Vitamix, so easy to make, fast and good! I used vegetable curry broth and added a dollop of sour cream to each bowl. Tasty, I will definitely make it again!

We found the soup very oniony...think cooking onion might help Can you smell my breath?

First time making a soup in the Vitamix. Decided to add a tiny bit of ground ginger and 5 small cherry tomatoes. Tasted great , a teeny bit of bitterness but I think it was my carrots not the recipe. Great full flavor, considering for next try adding either more carrots or a small cooked potato for more thickness. Also used chicken broth in place of vegetable broth.

This was a total disaster. Soup tasted entirely of onion. Very hot and entirely inedible. Had to throw it away.

Spicy, but starchy texture that I didnt enjoy like eating really green bananas.

Ingredients

  • 6 (366 g) medium carrots, cut in large pieces
  • 1 (70 g) small onion, chopped
  • 1/2 cup (120 ml) plain soy milk
  • 3/4 teaspoon curry powder
  • 1/8 lemon, peeled
  • 1/2 teaspoon salt
  • Ground black pepper, to taste
  • 2 cups (480 ml) vegetable broth

Directions

  • Place all ingredients into the Vitamix container in the order listed and secure lid. Select Variable 1. Turn machine on and slowly increase speed to Variable 10, then to High. Blend for 6 minutes or until steam escapes through lid. Serve immediately.
