They are usually LOADED with sugar. Sugar is fine in small doses, but when you’re talking about my two favorite things (pumpkin and chocolate) well, all self-control goes out the door! I decided to redesign my favorite cookie and these pumpkin chocolate chip protein cookies were born! They are low sugar, low calorie and AMAZING! Pumpkin Chocolate Chip Protein Cookies If there’s one thing better than protein cookies, it would have to be pumpkin chocolate chip protein cookies. Like I mentioned, these tasty little treats are super low calorie and low sugar, coming in at only 44 calories and 4g of sugar a cookie! They are sweetened with honey, which is arguably nature’s healthiest sweetener. Plus, these pumpkin chocolate chip protein cookies are made with IdealLean protein,  my favorite protein to bake with. This gives these cookies a little extra protein per bite, and help me reach my protein needs. If you didn’t know already, pumpkin is actually quite good for you: Pumpkin is full of vitamins A & C. You need these vitamins for a strong immune system! The orange color comes from beta-carotene, an antioxidant that can help prevent chronic diseases. Pumpkins are high in fiber and yield a high water content. This can help keep you full making them a great weight loss food. These cookies are soft and since they call for mini chocolate chips, have just the right amount of chocolate to compliment the pumpkin. They are quick to make and an easy clean up. Ingredients

  • 1/2 c pumpkin puree
  • Pinch of salt
  • 1 tsp. baking soda
  • 1/4 tsp. pumpkin pie spice
  • 1/2 tsp. cinnamon
  • 1 scoop vanilla IdealLean
  • 2/3 c white whole wheat flour
  • 1/2 tsp. vanilla extract
  • 1 large egg
  • 3 tbsp. honey
  • 2 tbsp. mini chocolate chips

Directions

  • In a medium bowl, whisk together the pumpkin, honey, egg, and vanilla extract. In another bowl, stir together the flour, protein, cinnamon, pumpkin pie spice, baking soda, and salt.
  • Combine wet and dry ingredients until just combined. Do not over stir. Fold in chocolate chips. Cover and chill dough for 30 min.
  • Preheat oven to 350 degrees.
  • After dough has chilled, line a cookie sheet with parchment paper. Use a 1 tablespoon sized cookie scoop to measure cookies. Bake for 7-9 min.
  • Allow to cool on the pan for a few minutes before removing. Cool completely on a cookie sheet.
