Only a few ingredients and can be prepped the night before, this total dudes recipe is perfect for busy weekday mornings.

Ingredients

  • ~4 frozen hashbrown patties
  • 1 cup shredded cheddar cheese
  • 8 slices bacon, cooked and crumbled
  • 6 eggs
  • 1½ cup milk
  • ~1 tsp cajun seasoning
  • salt and pepper

Directions

  • Preheat oven to 350F and grease a 9x13 baking dish
  • Lay the hashbrown patties along the bottom of the pan, sprinkling with the cajun seasoning, salt and pepper
  • Add bacon crumbles
  • Add cheese
  • Whip eggs with milk and more cajun seasoning, then pour over everything
  • Bake for 45-60 mins until it browns on top
  • Serve with salsa of your choice.
