Easy Christmas roast duck with crispy potatoes and port gravy

• Produce

  • 3 Bay leaves
  • 8 cloves Garlic
  • 1 thumb-sized piece Ginger, fresh
  • 2 kg Maris piper potatoes
  • 2 Oranges or blood oranges zested and
  • 3 Red onions
  • 3 sprigs Rosemary, Fresh

• Canned Goods

  • 1 Litre water or organic chicken stock

• Baking & Spices

  • 1 Black pepper, freshly ground
  • 1/2 Nutmeg, grated
  • 2 tbsp Plain flour
  • 1 Sea salt
  • 1/2 Stick cinnamon

• Beer, Wine & Liquor

  • 200 ml Port, red

• Other

  • 3 Carrots scrubbed and chopped into chunks
  • a few stalks celery trimmed and chopped into chunks
  • 2 X 2 kg whole ducks necks and giblets reserved and roughly chopped
