They weren’t kidding when they called it March Madness. My loft in downtown Kansas City happens to be just a few blocks away from the center where the Big XII men’s basketball tournament took place last week. And all week long, you could hear the cheers floating through the air and see people proudly repping their team’s jerseys all over town. It was pretty fun! That said, I’ll be the first to admit that watching sports has never really been my thing. But I am a happy “social sports fan”, especially when that involves having people over to watch the game and munch on some good snacks. All the better, of course, when those snacks involve some good Mexican food...like these cute little Easy Enchilada Cups I made recently! Turns out that if you poke some Old El Paso flour tortillas into a muffin tin, they can bake up into some delicious little hand-held tortilla cups. I filled mine with a chicken enchilada mixture, but really, the sky’s the limit for whatever filling ingredients sound good. Just grab your favorite enchilada sauce, mix and bake everything up together, and these delicious little cups will be ready to share in no time.
