Eggless blueberry cake

Ingredients

• Flour2 Cups
• Baking powder1 Tablespoon
• Salt1 Teaspoon
• Oil8 Tablespoons
• Sugar1-1/4 Cups
• Milk3/4 Cup
• Strawberry or blueberry yogurt1 Cup
• Fresh bluberries1 Cup
• Vanilla extract1 Teaspoon

Directions

• Preheat the oven. Line the base of your pan with wax paper. In a bowl combine flour, baking powder and salt. In a separate bowl beat the oil and and sugar till fluffy. Add vanilla extract, half of the yogurt and a little milk. Beat this up together.
• Add 1/3 of the flour and fold it in. Add the remaining milk and mix carefully. Fold half the remaining flour followed by the remaining yogurt , and finally the remaining flour.
• In a container add the half of the blueberries and coat them in a teaspoon of flour. Line the border of the pan with the coated blueberries.
• Toss in the remaining blueberries into the batter. Pour into lined pan and bake at 350 F for 45-50 minutes or till a inserted toothpick comes out clean!
• If you dont have fruit yogurt handy, then blend a handful of blueberries/strawberries with the yogurt before using it in the recipe!
