Feel Better Pho - 15 minute vegan, gluten-free, homemade pho & Soba noodles. Add chicken or beef…or keep it meatless. Better than chicken noodle soup during cold and flu.

Ingredients

  • 4 cups Vegetable Broth or my Crazy Easy Asian Soup Broth
  • 4.5 oz Gluten-Free Soba Noodles
  • 2 Green Onions (green part only; chopped)
  • 1 Lime (quartered)
  • Handful Cilantro (chopped)
  • Handful Peanuts (crushed)
  • 1 Jalapeño (thinly sliced)

Directions

  • Gather ALL ingredients and implement prep steps located next to ingredients (chop, dice, etc).
  • Cook SOBA NOODLES according to package directions; drain; rinse; set aside.
  • Meanwhile, heat VEGETABLE BROTH.
  • To serve, divide noodles evenly into two or three bowls; add vegetable broth and top with desired garnish ingredients.
  • Serves: 5 cups
