Feijoada, the national dish of Brazil, is a simply prepared black bean stew, loaded with various cuts of pork such as sausage, chorizo, and pork ribs. This is a communal meal meant to be shared with a crowd (but can also feed one all week).

Ingredients

  • 1.5 pounds pork ribs
  • 1 whole spicy, smokey Portuguese choriƧao, sliced
  • 1 cup (about) diced salpicao sausage (can be replaced with smoked ham, bacon, or keilbasa)
  • 2 large cans black beans, one drained and one not drained
  • 1 1/2 cup low sodium broth (or water + 1 bouillon cube)
  • 1/4 cup olive oil
  • 1/4 cup milk (optional)
  • 1 small can crushed tomatoes (optional)
  • Small yellow onion, diced finely
  • 6-8 cloves garlic, chopped
  • 4 whole hot peppers, fresh or dried (optional)
  • Splash of apple cider vinegar or wine
  • 4 bay leaves
  • 1 teaspoon thyme (I used lemon thyme)
  • 1/2 teaspoon paprika
  • Sea salt and black pepper, to taste
  • White rice
  • Hot sauce
  • Sauteed collard greens (see Notes)
  • Farofa (see Notes)

Directions

  • In a large pot, heat the olive oil over medium flame. Sautee the garlic and onions until translucent and cooked thoroughly, stirring so as not to burn. Turn the flame up to medium-high. Add the various meats and cook them for several minutes until browned. Mash about 1/2 of one can of beans with a fork. Once the meat is browned, add all of the remaining ingredients, except for the salt. Stir well, and simmer on low heat for about 2 1/2 hours, or until pork is cooked and ribs are fall off the bone. Salt halfway through cooking, to taste. Serve with white rice and hot sauce.
